MawMaw's Banana Cake

If you like banana breads and cakes then you absolutely must try this recipe. It is easy and produces the lightest, best flavored banana cake you ever tasted!

Ingredients

  • 1 c. sugar
  • 1 tsp. soda
  • 1/2 cup butter, softened
  • 1/4 tsp salt
  • 1 egg
  • 1 1/4 c. very ripe bananas, mashed (about 4 bananas)
  • 1 1/2 cups flour

Preheat oven to 350°.
Butter and flour 2 - 9" round cake pans or 1 - 9"x13" pan.

Cream the butter and sugar together. Add the egg and mashed bananas. Sift together the flour, soda and salt, then add slowly to the banana mixture as you continue to blend.

Pour into the prepared pan(s) and bake for approximately 25 minutes for 2 layers, or 35 minutes for the 9x13 pan.

Frost with your choice of frosting.
